These wood chunks need to be soaked for about 20 minutes before placing on the charcoal in your BBQ. This package includes a 5-Pound bag of apple wood chunks. Apple wood is a more complex flavor than alder wood, yet it is still quite mild. This wood is excellent when smoking pork, fish and poultry.

First time buyer of Cameron Colorado wood products and I'm bummed with this poor product. With meats, I use hickory chunks "chopped" down to the size I desire on my smoker. I always use alder wood chips for smoking salmon. I decide to try these alder chunks not realizing it came from Colorado. The chunks burnt uneven, some burnt all the way while others barely got started. Quite possible it's the varying age of the wood as the color varies amongst chunks, or it is the source of the wood, Colorado. Smoke produced was good but not as aromatic and flavor sucked. Did not have the sweet alder wood flavor at all! For smoking salmon only use pacific northwest red alder. Sorry Cameron's, but your alder wood ranks last in my books.
